Wedge Salad Skewers

Makes: 20 skewers


-1 head iceberg lettuce, chopped into 20 bite-sized chunks

-10 slices bacon, cooked and chopped into quarters

-1 red onion, roughly chopped

-2 avocados, diced

-20 cherry tomatoes

-blue cheese or ranch dressing

-freshly ground black pepper, to taste


-Stack 1 chunk lettuce, 2 pieces quartered bacon, a few slices onion, 1 piece avocado, and 1 tomato to 4-6 inch skewers. Repeat to fill 19 more skewers.

-Drizzle with dressing and season with black pepper to taste.

Vegan option: Use plant-based bacon and vegan dressing
