-1 loaf of Italian bread
-1/2 stick of butter (or 2 tbsp of olive oil)
-1 red onion
-half a cucumber
-small bunch of parsley
-2 cloves of garlic (not whole head of garlic)
-salt and pepper (to taste)
Mince the garlic as fine as possible, almost to a paste and add to the butter or olive oil.
Cut the bread in 1/2-inch slices, diagonally.
Add butter and garlic mix to each slice of toast. Bake at 350 degrees for 3-4 minutes.
While the bread bakes, dice the veggies into small pieces and mix together. Once mixed, add salt, pepper and lime with 1/2 tsp of olive oil.
Spoon mix onto toast and enjoy!
