Vegas Kimchi Fries

  • 1 lb French fries

  • 1 cup vegan kimchi

  • ½ cup vegan cheddar cheese or cashew queso

  • 2 green onions

  • 1 jalapeno

  • 1 avocado

  • 1-2 tbsp fresh cilantro

  • Squeeze of lime


  • ½ cup vegan mayonnaise

  • 2 to 4 Tbsp sriracha


  1. Prep your ingredients first, finely chop the kimchi, slice green onions, dice jalapeno, slice avocado, chop a handful of cilantro, and get your cheese ready, if using queso warm it up a bit in the microwave.

  2. Make your sauce, in a small bowl stir together mayo and sriracha.

  3. Set aside.

  4. Cook fries, you can use any method you'd like from oven to stovetop or air fry until they're as crispy as you like.

  5. Now assemble your dish, with the fries still hot, sprinkle on the cheddar/queso, then top with all other ingredients then drizzle your sauce on top, finishing with a squeeze of lime. Serve immediately with some AgustDelicious chicken.
