2 tbsp chopped green onion
2 tbsp diced carrot
2 tbsp teriyaki sauce (optional)
Mayo to drizzle (you can thin with water)
Toasted sesame seeds for garnish
Furikake or crushed seaweed chips
1 serving of rice (about a cup/ cup and 1/2)
Dice your green onion and carrots as small as possible. Cut the spam you will need about 2-3 pieces about 1/2 thick.
In a nonstick pan on medium heat fry your spam until golden brown and set aside.
Clean your pan and fry your egg next. You want a sunny side consistency with a runny yolk. Set this aside as well
Add some oil to the pan and cook your green onions and carrots for 1 Minute. Add your cooked rice and stir fry until combine thoroughly.
Assemble your plate by adding the rice first, now you want to take your mayo and drizzle it all over the rice before adding your other toppings (or you can save for last and cover the entire bowl: eggs and spam included) then plate the egg and the spam.
Garnish your egg with toasted sesame seeds and teriyaki sauce drizzled on top. And serve! Sometimes this dish gets tuna added to it during the stir-frying. It's up to you if you like venturing that way! Enjoy!
