Scalloped Potatoes

Cook Time: 40-45 mins


INGREDIENTS

  • Butter or Vegetable oil for greasing the pan.

  • 3-4 medium/large potatoes

  • 1-2 sweet potatoes

  • 8 oz grated sharp cheddar cheese (save 2oz for later)

  • 3 oz grated Parmesan cheese

  • 2 cups whole milk

  • 1/3 cup sliced scallion/chives or both (to top with)

  • Salt/Pepper


DIRECTIONS

  1. Preheat oven to 350. Grease a 9×13 pan and set aside.

  2. Peel and thinly slice potatoes. Slice scallions/chives and set them aside for later. Grate the cheese, if not already grated. Measure out the milk.

  3. Grab the pre-greased pan and start to layer in your ingredients. Start with a layer of potatoes, mixing both kinds. Season with salt and pepper. Pour over some milk.

  4. Add a layer of cheddar cheese.

  5. Repeat the steps above until all ingredients are used.

  6. Cover with tin foil and bake for 40 minutes. Uncover after 40 minutes and top with the remaining Parmesan and cheddar cheese. Bake for another 5 minutes or until a golden brown, cheesy crust has formed on the top.

  7. Remove from the oven and top with pre-cut scallions/ chives. Serve as a main dish or side dish.


*For extra flavour, cook and dice a few strips of bacon and add to the top after it's cooked or add to layers. You can also mix breadcrumbs with parmesan for a top crust.

VEGAN Note: All dairy ingredients can be subbed for plant base products.
