Ingredients
8oz (226g) cooked ham, thick
1 small carrot
1 small onion
2 eggs
2-3 cups cooked rice
2 tbsp/ 30ML oil
Can use vegan substitutes
Note: you can also use cauliflower rice
Directions:
Dice your carrots, onions, and ham into small pieces.
Before you start cooking, get your rice cooked (we prefer day-old rice but either works).
In a pan, add 2 tbsp/ 30ML oil and set it at medium-high heat. Then add your carrots and onions and stir. Let it cook for 1 minute. Then add your ham and stir everything to combine. Let it fry for 3-4 minutes, stirring occasionally.
While that cooks, scramble your eggs and set them aside.
Add your rice to your carrot, onion, and ham mix and mix thoroughly to incorporate and stir fry together.
Make your omelet in a large pan and let it cook on medium heat.
To assemble, top your rice with your omelet and then add your sauce of choice on top (i.e., katsu sauce and ketchup or mayo-ketchup, etc..). Garnish with toasted sesame seeds and enjoy.
