1 bunch buttercrunch lettuce
Romaine lettuce (or any leafy lettuce), chopped
1 bunch parsley
3 tbsp/45 mL olive oil
juice of 1/2 a lemon
salt and pepper
1/2 tsp/1.2 mL sugar
1/2 tsp/1.2 mL mustard
3 tbsp/45 mL mayonnaise (vegan mayo or plain yogurt)
Clean and chop all the greens lengthwise.
Make the dressing by combining all the ingredients, except the mayonnaise, in a food processor and blitzing until well blended.
Toss the greens with 2 tbsp/30 mL dressing. Whisk the mayo or yogurt (you can use dairy-free/ vegan) into the remaining dressing. Spoon this onto a large plate and spread evenly. Pile the greens on top and enjoy!
