Green Salad


  • 1 bunch buttercrunch lettuce

  • Romaine lettuce (or any leafy lettuce), chopped


  • 1 bunch parsley

  • 3 tbsp/45 mL olive oil

  • juice of 1/2 a lemon

  • salt and pepper

  • 1/2 tsp/1.2 mL sugar

  • 1/2 tsp/1.2 mL mustard

  • 3 tbsp/45 mL mayonnaise (vegan mayo or plain yogurt)


  1. Clean and chop all the greens lengthwise.

  2. Make the dressing by combining all the ingredients, except the mayonnaise, in a food processor and blitzing until well blended.

  3. Toss the greens with 2 tbsp/30 mL dressing. Whisk the mayo or yogurt (you can use dairy-free/ vegan) into the remaining dressing. Spoon this onto a large plate and spread evenly. Pile the greens on top and enjoy!
