Dynamite Corn Cheese

  • 1 can sweet corn kernels, drained

  • 1/2 cup mayonnaise (or vegan mayo)

  • 4oz shredded mozzarella (or vegan cheese)

  • 1 chili pepper, diced (optional)

  • 1 1/2 tsp sugar

  • 2 green onions, thinly sliced

  • dash of salt and pepper, to taste


  1. Preheat the oven to 380F.

  2. Combine all ingredients into a mixing bowl and stir together.

  3. Pour mixture into a lightly greased baking dish or cast iron (We recommend using a baking dish or cast iron so that you can eat it directly from the bakeware rather than transfer the results into a serving dish).

  4. Bake for 10-12 minutes. For the last 2 minutes, turn your oven to 'broil' so that the top can brown and the cheese can completely melt.

  5. Safely remove the pan and remember it will be hot.

  6. Serve hot and enjoy!
