1 can sweet corn kernels, drained
1/2 cup mayonnaise (or vegan mayo)
4oz shredded mozzarella (or vegan cheese)
1 chili pepper, diced (optional)
1 1/2 tsp sugar
2 green onions, thinly sliced
dash of salt and pepper, to taste
Preheat the oven to 380F.
Combine all ingredients into a mixing bowl and stir together.
Pour mixture into a lightly greased baking dish or cast iron (We recommend using a baking dish or cast iron so that you can eat it directly from the bakeware rather than transfer the results into a serving dish).
Bake for 10-12 minutes. For the last 2 minutes, turn your oven to 'broil' so that the top can brown and the cheese can completely melt.
Safely remove the pan and remember it will be hot.
