Corn Salad

Ingredients:

-1 can sweet corn, drained

-1/2 onion, diced

-1 tbsp green bell pepper, diced

-1 tbsp red bell pepper, diced

-4 tbsp mayonnaise

-1/2 tbsp vinegar

-1 tbsp sugar

-1 pinch pepper

-1 pinch salt

*vegan note: use vegan mayo

You can also add some paprika or red/green chili pepper for heat


Direction:

  1. Chop all your vegetables and drain the can of corn

  2. In a small bowl, combine the mayonnaise, vinegar, salt, pepper, and sugar. Make sure to mix well.

  3. Add the drained corn and the vegetables into another bowl and pour in the mayonnaise mix. Mix thoroughly, taste and adjust the seasoning, if needed.

  4. Serve and enjoy!
