Caprese Salad Skewers
Prep time: 15 minutes
-20 grape or cherry tomatoes
-5 slices bacon, cooked and cut into 6 pieces each
-20 leaves fresh basil
-20 fresh mozzarella balls (if u cant find it, use cut cheese sticks or mozzarella cut into small squares)
-1/4 cup/ 59 ml basil pesto
-2 tbsp/ 30 ml olive oil
-black pepper to taste
Skewer the tomatoes, bacon pieces, fresh basil and mozzarella balls onto toothpicks, in that order (fold the basil so its easy to handle)
In a small bowl, whisk together the pesto and olive oil. If it's still thick, thin out with more oil.
Drizzle the pesto over the skewers. Top with fresh ground pepper. Enjoy!
Vegan option: use vegan mozzarella and plant-based bacon. Make sure the pesto is vegan friendly.
