Breakfast Taquitos

Makes 12


Ingredients:

-12 breakfast sausage links

-8 large eggs

-1/4 cup/ 59ml spring onions, finely sliced

-1/4 tsp/ 1 ml ground black pepper

-1 tbsp/ 15 ml taco seasoning

-12 small tortillas

-1 cup/ 250 ml shredded cheddar cheese

-cooking spray


Directions:

  1. Preheat oven to 350F/176C.

  2. Add the olive oil to a large skillet, along with the sausage links. Over medium heat, cook the sausages until browned on all sides. This should take about 15 minutes. Remove the sausages from the skillet and set aside. Discard all of the oil left in the skillet, except 1 tbsp.

  3. Whisk together the eggs, green onions, salt, ground pepper and taco seasoning. Add the eggs to the skillet, with the remaining one tbsp of oil from the cooked sausages, and over medium heat, cook the eggs, stirring often. Set the eggs aside to cool slightly.

  4. Wrap the tortillas in paper towels and warm them for about 1 minute in the microwave. Remove the tortillas from the microwave and spread them out of a clean surface, then evenly distribute the scrambled eggs in a clean line of each tortilla. Next, distribute the cheese over each evenly. Top with a cooked breakfast sausage.

  5. Roll each tortilla tightly and place on a baking sheet lines with aluminum foil. Make sure the seam side of the tortilla is facing down so it doesn't open up while baking.

  6. Lightly coat the top of each with non-stick cooking spray and bake for 20 minutes of until the tortillas are golden brown. Serve warm and enjoy!
