Prep time: 15 min
1 can refried beans (your choice)
1 whole tomato
1 white onion
1 bunch cilantro (use half)
1 pack shredded cheese (your choice)
small tub of Daisy sour cream
1 avocado (diced and mashed)
2 limes (or 2 tsp lime juice)
Microwave the refried beans and the cheese for 1:30 minutes or until cheese is melted (note: no longer, dish will still be served at room temperature)
Chop the tomato, onion, cilantro, and mix. Add a bit of salt to taste and finally squeeze some lime juice to create pico de gallo.
Smash the avocado and add lime and salt, to taste.
Lastly, assemble. First the beans and cheese then the pico and finally, with smashed avocado and sour cream to top it off. Enjoy!
