Servings: 4 hot dogs
Ingredients:
4 hot dogs, chicken/ turkey dogs or Italian sausage can be used as well (or use your favorite meatless option)
4 brioche buns, regular buns or Italian bread, sliced down the middle
1/3 cup red onion, finely chopped
1 long English cucumber, sliced into 1/4-inch circles
1 cup grated carrots
2 tbsp fresh cilantro leaves
2 tbsp fresh mint leaves
1/2 tsp white granulated sugar
1 1/2 tsp rice vinegar
1 wedge fresh lime
1/2 cup mayonnaise (or vegan mayo)
2 tbsp chili garlic sauce or sriracha
Directions:
Stir together the vinegar and sugar until the sugar is dissolved. Stir in the carrots and salt and let sit for 10 minutes.
Whisk together the mayo (or substitute) and the garlic sauce or sriracha and set aside.
Boil or grill your hot dogs, sausages or veggie dogs.
Slice your cucumbers thinly, chop your herbs and red onions. Prep your bun: divide the spicy mayo among the four buns, spreading down the side of each bun. Place the slices of cucumbers, onions, and shredded carrots on each side, then place your sausage down the center of the bun. Top with herbs and lime juice. Serve and enjoy!
