Yoongi's Gambia's Al Ajillo

Ingredients:

-About 1lb small, raw shrimp

-extra virgin olive oil

-4 tbsp minced garlic

-1/8 cup dry sherry or dry white sine

-butter

-sea salt

-1-2 cayenne peppers


Directions

  1. Ensure the shrimp shells/tails/veins are removed, if they aren't already.

  2. Completely coat the bottom of a large frying pan with olive oil and slowly heat along with the garlic and cayenne pepper pods.

  3. When the garlic begins to sizzle, add shrimp and sauté for about 1 minute or so.

  4. Once everything starts to sizzle again, add a splash of sherry/ or wine (**Be careful if using a gas stove as alcohol is flammable) and add a sprinkle of salt.

  5. Simmer for about 1 minute, until all of the shrimp is cooked (pink, before they start curling in on themselves as that means they're overcooking).

  6. Remove from heat and divide into 4 portions. Top each with a touch of butter, stir and enjoy!
