Vegan Mama Kim's Sandwiches

Makes 2 sandwiches
1 can chickpeas, drained
4 slices of bread, toasted (your choice)
1 nori sheet, finely chopped
1/4 cup seedless cucumber, chopped
1/4 cup onion, chopped
1/4 cup red bell pepper, chopped
6 capers, finely chopped
1/4 cup vegan mayonnaise
4 leaves of lettuce, washed and pat dried
1 tsp lemon juice
1 tbsp nutritional yeast
1 tbsp tamari or soy sauce
1/2 tbsp dijon mustard
1/2 tsp salt and 1/4 tsp ground black pepper
Add the chickpeas to a mixing bowl and mash them with a fork.
Add in vegan mayonnaise, finely chopped nori, onion, lemon juice, finely chopped capers, cucumbers, pepper, nutritional yeast, tamari, dijon mustard, white vinegar, salt, and pepper, and mix to incorporate thoroughly. Taste and add more salt and pepper if needed.
Assemble your sandwiches. Cut the crust off your bread slices.
Add 1 leaf of lettuce to each "bottom" slice of bread. Divide the tuna mixture into 2 and spread it on each slice of bread. Cut them into halves (not diagonally) and serve. Enjoy!
