Vegan Dynamite Bagel Bites

Makes: 20 bites
Pressed tofu, tempeh or plant base "chicken"
10 mini bagels
6 tbsp/90 ml Sriracha sauce (more or less to your heat level)
shredded vegan mozzarella cheese
3 tbsp/45 ml vegan butter
salt and pepper
Preheat oven to 350 degrees.
If using tofu (pressed it until there's no moisture) if you're using a chicken alternative, chop so the "chicken" is as chopped as possible to fit into the small bagels.
Add the "chicken" or tofu, butter, and sriracha to a pan and sauté on low until butter is melted and the sauce and chicken are well combined.
Using a baking sheet, place the bagels and start assembling your Dynamite Bagel Bites, start by adding the "chicken"/tofu mixture on top with the cheese. Place in the oven on broil for 5 minutes or until the cheese is melted and brown on top. Serve and enjoy with some funk and soul.
