Strawberry Mousse

Prep time: 25 minutes

Serving: 4 cups


Ingredients:

-1/2 lb fresh strawberries

-1/2 cup sugar

-3/4 cup whipped cream, cold

-4 tbsp cream cheese, cold

-few drops of vanilla extract

-1 tbsp orange liquor (optional)

-fresh strawberries, to serve


Directions:

*Have individual cups ready

  1. Wash strawberries, remove stems and cut in half.

  2. Put them in a processor or blender with half the sugar, vanilla and liquor. Process until smooth and juices are released. It will be a liquid. At this point, you can sieve the mixture for a smoother consistency.

  3. In a large bowl, beat the cream, cream cheese, and remaining sugar until medium peaks form (not completely stiff).

  4. Mix with the strawberry mixture, careful not to overmix as it might curdle.

  5. Divide among 4 cups, refrigerate and serve when ready. Top with fresh strawberries and enjoy!
