Smoked Duck salad

Ingredients:

-smoked duck (chicken or tofu)

-lettuce (butter, romaine)

-cherry tomatoes, sliced

-red onions, sliced

-black olives, sliced

-1/2 cucumbers, julienne cut


*Dressing:

-1 tbsp apple cider vinegar

-2 tbsp olive oil

-1 tsp dijon mustard or spicy mustard

-1/2 tsp ground ginger

-1 pinch ground parsley

-sprinkle of salt and pepper


Directions:

  1. In a small bowl, mix your dressing ingredients and set aside.

  2. For this salad, you can use premade smoked duck, rotisserie chicken or smoked tofu. Roughly chop the lettuce and arrange on a bowl. Start assembling your salad by adding the rest of the veggies after cutting them. Top with the protein. Serve with dressing on the side and enjoy.
