Korean Style Curry

Preparation:

prep time: 10 minutes

cook time: 25-30 minutes

total: 45 minutes


Ingredients

-olive oil

-1 lb beef or chicken, cut into cubes

-2 potatoes, peeled and diced

-3 small onions, cut into chunks

-1/2 package (8.4 oz) curry mix (we recommend Ottogi Curry mild mix)


Directions

  1. Heat oil in a pan over medium heat. Add the meat, potatoes, carrots and onions and saute until onions are lightly browned, about 4-5 minutes.

  2. Add 3 1/3 cups water and bring to a boil. Reduce heat, cover and simmer until meat is tender, about 15 minutes.

  3. Add curry mix into pan and stir until you have a sauce like consistency.

  4. Simmer for 5 minutes, stirring constantly.

  5. Add some green onions for garnish and serve immediately over rice or noodles. Enjoy!


Vegetarian:

The meat in this dish can easily be substituted to just vegetables by adding broccoli, corn, mushrooms, cauliflower with the potatoes, carrots, and onions. You can also add semi-firm to firm tofu towards the last 5-7 minutes of simmering after following the instructions for the veggies.
