JK's Vegan Fajitas

Prep time: 2 hrs, 15 min

Cook time: 15 min

Total: 30 min

Servings: 6

INGREDIENTS

  • 1/2 pound of seitan or Shiitake mushrooms, sliced, or pinto/black beans

  • 1 tablespoon oil

  • 2 medium white onions, sliced

  • 2-3 (any color) bell peppers, sliced

Steak Marinade:

  • ⅓ cup lime juice

  • 3 tablespoons olive oil

  • 1 tablespoon minced garlic

  • 2 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • ½ teaspoon red pepper flakes

  • salt and pepper to taste

  • ¼ cup chopped cilantro

DIRECTIONS

  1. Add all the marinade ingredients to a bowl and stir until well combined. Cover and refrigerate for at least 15-30 minutes, ideally for 2 hours or even overnight. Drain the seitan, don't discard the marinade. Cook the seitan in a skillet over medium-high heat for 5-10 minutes or until golden brown. Set aside.

  2. Add some oil and put in the veggies, salt, and marinade to the skillet. Stir and cook over medium-high heat for 5-10 minutes or until veggies are softened.

  3. Add the cooked seitan to the skillet, stir and cook for 1-2 more minutes. Serve it with warm tortillas and your favorite toppings like JK and Hobi. Enjoy!
