-6 large russet potatoes, rinsed
-1/4 cup olive oil
-1 tbsp minced garlic (or 3 tsp garlic powder)
-1/2 tsp onion powder
-2 tsp salt (adjust to taste)
-1 tsp paprika
-1/2tsp black cracked pepper
-2/3cup finely grated or shredded parmesan cheese, divided
-2 tbsp fresh chopped parsley, for garnish
Preheat your oven to 425F (220C). Line a baking sheet with parchment paper and set aside.
Rinse and pat potatoes dry. Cut in wedges and place in a large bowl. Drizzle with olive oil and toss to coat well.
In a small bowl, whisk together parmesan, salt, pepper, garlic, onion powder, and paprika. Sprinkle potato wedges with the cheese and seasoning mixture and toss to coat thoroughly.
Place potato wedges on the baking sheet in a single layer and bake for 25 minutes until fork tender and golden.
When potatoes are done, remove from the oven and sprinkle with freshly chopped parsley and the rest of the cheese. Transfer to a serving plate and your favorite sauce/condiment. Enjoy!
