Dynamite Shrimp

Prep time: 20 minutes

Cooking time: 35 minutes


Ingredients:

-1 lb shrimp

-1/2 tsp sugar

-1/2 tbsp paprika

-1/2 tsp salt

-1/2 tsp black pepper

-1/2 tsp cayenne


*For coating mixture:

-1/2 cup cornstarch


*For Dynamite sauce:

-3/4 cup mayonnaise

-2 tsp lemon juice

-5 tbsp sriracha sauce

-1 tsp honey


Directions:

  1. Pat the shrimp with paper towels (if using raw shrimp, remove the tails and shells). Plate the shrimp in a bowl and add salt, sugar, black pepper, paprika and cayenne. Mix well and cover the bowl to let marinade for 30 minutes in refrigerator.

  2. Take the shrimp out and put either one at a time or all together into the cornstarch, making sure all are coated.

  3. Fry the shrimp but do not overcrowd, until lightly browned and cooked through for about 4-5 minutes.

  4. In a large mixing bowl, stir together all ingredients for the sauce and taste. If you want it spicier, add more sriracha. Add the shrimp to the sauce and coat each piece. Serve over lettue or rice. Garnish with chopped scallions and enjoy!
