Dynamite Chicken

Ingredients:

*For chicken:

-1/2 lb chicken breast

-1/2 tsp sugar

-1/2 tsp paprika

-1/2 tsp salt

-1/2 tsp black pepper

-1/2 tsp cayenne


*For coating mixture:

-1/2 cup cornstarch

-1 egg


*For dynamite sauce:

-3/4 cup mayonnaise

-2 tsp lemon juice

-5 tbsp. sriracha sauce

-1 tsp honey


Directions

  1. Pat the chicken breast with paper towels and then cut into one-inch cubes. Place the cubed chicken into a bowl. Add the salt, sugar, black pepper, paprika, and cayenne. Mix well. Cover the bowel and let the chicken marinate for 30 minutes in the refrigerator.

  2. Start heating oil in a wok or frying pan.

  3. Take the chicken out of the refrigerator, and crack an egg directly over them. Mix well. Dump in the start and mix to make a pasty batter.

  4. Fry the battered chicken at 350F (do not overcrowd the pan, so fry in batches if necessary) until lightly browned and cooked through, about 4-5 minutes.

  5. In a large mixing bowl, stir together all the ingredients for the sauce. Adjust to taste. Add the fried chicken to the sauce and coat each piece evenly.

  6. Serve chicken over lettuce or rice or in a wrap. Garnish with chopped scallions and serve.
