1 block firm or extra firm tofu
2 tbsp soy sauce
2-4 tbsp nutritional yeast
pinch of salt and pepper
Preheat the oven to 400F (Note: this is perfect for the toaster oven too).
Pat the tofu dry with a paper towel. Place the tofu between a dry paper towel and put a heavy pan on top (this will reduce the amount of water in the tofu so that it'll crisp up). Let it sit weighted down for about 20 minutes.
Cut the tofu into cubes about 1/2 inch in size. Put the tofu into a bowl with the soy sauce and mix. Add the nutritional yeast in and mix so that the nutritional yeast sticks to the tofu.
Spray a baking sheet with nonstick spray and lay the tofu out. Place it into the oven and bake for about 15 minutes. Take out of the oven and flip the tofu over and bake for another 15 minutes. Once lightly browned and crisp, take it out and serve. Enjoy!
Note: this can be served warm or cold.
