Makes 24 bites
-7 whole graham crackers (1 cup), finely crushed
-1/4 cup powdered sugar
-6 tbsp unsalted butter (any kind will do)
-2 chocolate bars or choice (1.55oz), divided into rectangles
-12 large marshmallows, cut in half
**Vegan: can also replace with vegan alternatives
Preheat your oven to 350F/175C. Lightly grease your muffin tin.
Break up the chocolate into pieces and cut marshmallows in half (scissors or a knife in cold water should help cut them)
Crush the graham crackers into fine crumbs (grind them in a food processor or place them in the freezer bag and smash with a spoon; whichever works).
In a small bowl, combine graham cracker, powdered sugar and butter.
Divide the mixture evenly into muffin tin and press down to form shallow cups.
Bake for 4-5 minutes or until the edges are golden brown.
Remove the cookie mix from the oven and add a piece of chocolate into each. Add a marshmallow, cut side down, on top of each cup and bake again for 2-4 minutes, or until the marshmallow is slightly soft.
For a roasted marshmallow, you can broil them for 1 minute.
Cool for 15 minutes then remove from the pan and enjoy!!
