Corn Ice Cream Sandwiches

Ingredients:

  • 300mL double cream

  • 1/2 can condensed milk

  • 2 drops vanilla extract

  • 1 1/2 cup sweetcorn

  • buttery crackers

  • semi-dark chocolate

Directions:

  1. Whip the cream to soft peaks and combine with the condensed milk, vanilla extract, and sweetcorn kernels.

  2. Put it in the freezer until set to ice cream consistency.

  3. Melt half of the chocolate and chop the remaining chocolate finely.

  4. Dip the crackers completely in the chocolate and set them on parchment paper and set in the fridge.

  5. Scoop portions of the ice cream onto the crackers and create sandwiches with them.

  6. Cover the exposed ice cream with chocolate and return to the freezer until fully set. Once set, enjoy!
