-1 cup long grain rice or basmati rice
-2 cups water
-1 tsp kosher salt
-1 tbsp butter
-1 bay leaf
-3 tbsp lime juice
-3 tbsp lemon juice
-1 cup cilantro, finely chopped (optional)
Wash the rice: Always rinse your rice before you cook it. Rice until water runs clear.
Transfer the clean rice into a pot and add water, bay leaf, salt, and butter to the rice. Cover the lid and cook on medium heat for 15 minutes or until the water is dry and the rice is cooked through. Carefully remove the bay leaf.
Add the cilantro leaves, lime, and lemon juice to the rice. Stir and mix the cilantro well. Cover and let stand until you are ready to serve warm.
