Cook time: 10 minutes Makes 5 dozen cookies
Ingredients:
-1/2 cup confectioner's sugar
-1/4 tsp salt
-1 cup butter or margarine, softened
-1 tsp vanilla extract
-2 1/4 cup all-purpose flour
-1/2 cup chopped pecans
-additional confectioner's sugar
Directions:
In a large bowl, combine sugar, salt, and butter. Mix well. Add in vanilla.
Gradually stir in flour. Add the nuts. Cover and chill until firm.
Preheat oven to 400 degrees Fahrenheit.
Form dough into 1-inch balls. Place the balls 1 inch apart on ungreased cookie sheets.
Bake 8-10 minutes until set but not brown. Roll in sugar immediately. Cool on wire racks. Roll in sugar again.
