Chocolate Souffle

Ingredients:

-1 cup (340g) semi-sweet chocolate chips

-1/4 cup (59 ml) sweetened condensed milk

-3 large eggs, separated

-softened unsalted butter and granulated sugar, for ramekins


Directions:

  1. Preheat the oven to 400 degrees fahrenheit. Rub a thin, even layer of butter on the bottoms and sides of four 4-oz ceramic or glass ramekins, then sprinkle with sugar to evenly coat. Shake out excess sugar. Refrigerate the ramekins until ready to fill.

  2. Put the chocolate chips in a large heatproof bowl set over a saucepan of simmering water (or a double boiler pot). Melt, stirring occasionally, just until smooth. Remove from the saucepan and wipe the bottom of the bowl dry (careful as it'll be hot). Add the sweetened condensed milk and 2 egg yolks. Whisk until smooth.

  3. Beat the egg whites in a clean bowl until medium-stiff peaks form. Scoop 1/3 of the beaten whites into the chocolate mixture and stir with the whisk to loosen the chocolate mixture. Add half of the remaining whites and gently fold with a silicone spatula until just a few white streaks remain. Add the remaining whites and gently fold until the last streak of white disappears. Put the chilled prepared ramekins on a rimmed baking sheet and divide the batter evenly among them. Bake until risen above the rims and set, 12-14 minutes. Serve immediately and enjoy!!


**Vegan:

-4 tbsp (60 ml) vegan brown sugar

-1/2 cup all-purpose flour

-1 tbsp (15 ml) olive oil

-1/2 tsp (1.2 ml) baking powder

-few drops of vanilla essence

-2 tbsp (15 ml) melted vegan dark chocolate

-1 tbsp (15 ml) cocoa powder

-1/2 cup (118 ml) hot water


  1. Preheat the oven to 350 degrees fahrenheit.

  2. Take a bowl and add the all-purpose flour, vegan brown sugar, baking powder, and cocoa powder together and whisk.

  3. Take a small bowl and add the vanilla essence, olive oil, hot water, and melted vegan dark chocolate.

  4. Take the dry ingredients and wet ingredients together and mix well.

  5. Once the mixture is ready to be baked, take small oven-safe dishes and grease them with olive oil.

  6. Pour the batter in each of the baking dishes, but make sure that you add a piece of dark chocolate in the middle so that the center is nice and gooey once they are baked. Let the chocolate souffles bake for about 20 minutes. Check at regular intervals. When done, serve immediately and enjoy!!
