Makes 3-4 cups
2 cups vanilla ice cream
2 cups cream soda ice cubes
2 tsp butter extract
4 tbsp butterscotch syrup, plus extra for garnish
1 cup cream soda
whipped cream, for topping
Tip: you can add 1-2 shots of rum per cup to make it alcoholic, if desired
Freeze the cream soda in ice cube trays.
Put all of the ice cream, butter extract, 4 tbsp butterscotch syrup, 1 cup cream soda, and the cream soda cubes into a blender and whip it until smooth.
Pour the butterbeer into a frozen glass and top it with whipped cream and butterscotch syrup. Enjoy!
