BLT Tea Sandwiches

Ingredients:

  • 4 slices of very thin, white bread

  • 2 strips bacon

  • 2 cocktail tomatoes

  • 2 leaves butter lettuce

  • 1 tbsp Japanese mayonnaise (regular mayo is ok too)

  • cocktail toothpicks

Directions:

  1. Cut the bacon into 4 pieces and cook in a frying pan or in the oven until crispy then place onto a paper towel to drain excess oil.

  2. Using a small, round cookie cutter and cut circles out of the lettuce and bread.

  3. Slice tomatoes to no more than 1/4" thick. Blot tomatoes with a paper towel to remove the juice.

  4. Spread a thin layer of mayo on the bread and start assembling the tea sandwich. Layer the bread with lettuce, tomato, and bacon. Repeat the process with the remaining ingredients. Skewer with the cocktail toothpicks or small skewers. Enjoy!
