2 cups finely crushed vanilla wafers
1/4 cup butter, melted
3/4 cup packed brown sugar
3 packages (24oz) cream cheese, softened
2 tsp rum extract
1/2 cup mashed ripe bananas
1/4 cup salted butter
1/2 cup light brown sugar
1/8 tsp ground nutmeg
1/2 tsp ground cinnamon
1 tbsp heavy whipped cream
1/4 cup powdered sugar
1 tbsp rum extract
Preheat the oven to 350F. Combine the wafer crumbs, butter, and 1/4 cup sugar. Press it into a 13x9-inch or circle pan sprayed with cooking spray.
Beat the cream cheese, rum extract, and remaining sugar in a large bowl with a mixer until blended. Add eggs, one at a time, mixing on low after each egg. \
Stir in the mashed bananas and pour over your crust.
Bake for 30 minutes or until the center is almost set.
Banana foster: Melt the salted butter in a saucepan over medium-high heat. Add the brown sugar, nutmeg, cinnamon, splash of rum extract and heavy cream. Stir until the sugar is dissolved (constantly stirring).
Slice bananas and add to the sauce. Pour it on top of the cheesecake and let it cool. Enjoy!
