Bibimguksu (spicy mixed noodles)

-somyeon or soba noodles

-1/4 cucumber, shredded or matchsticks

-4 spring onion stocks, shredded

-1/2 cup red cabbage, shredded

-1/2 cup watercress or lettuce, thinly sliced

-1 small carrot, shredded

-2 tbsp kimchi

Bibim sauce

-3 tbsp gochugaru

-1 tbsp gochujang

-2 tbsp sugar or honey

-1 tbsp sesame seeds

-1 tbsp apple or regular vinegar

-1 tbsp soy sauce

-1 tbsp sesame oil

-1/4 cup water

*Vegan note: substitute any animal products.


  1. Cut or shred all the vegetables. Set aside.

  2. Make bibim sauce: in a bowl, mix all sauce ingredients until completely combined and smooth

  3. Cook noodles. Put water into a pot. Put on a medium-high heat and bring up to a boil. Drain the water and rinse noodles until cold water. Set aside and let the excess water drip off.

  4. Mix all the veggies together so it's easier to top and get a bite of all the different veggies.

  5. Toss cooked noodles in bibim sauce. Place in a bowl and top with the veggies. Enjoy!
