-somyeon or soba noodles
-1/4 cucumber, shredded or matchsticks
-4 spring onion stocks, shredded
-1/2 cup red cabbage, shredded
-1/2 cup watercress or lettuce, thinly sliced
-1 small carrot, shredded
-2 tbsp kimchi
-3 tbsp gochugaru
-1 tbsp gochujang
-2 tbsp sugar or honey
-1 tbsp sesame seeds
-1 tbsp apple or regular vinegar
-1 tbsp soy sauce
-1 tbsp sesame oil
-1/4 cup water
*Vegan note: substitute any animal products.
Cut or shred all the vegetables. Set aside.
Make bibim sauce: in a bowl, mix all sauce ingredients until completely combined and smooth
Cook noodles. Put water into a pot. Put on a medium-high heat and bring up to a boil. Drain the water and rinse noodles until cold water. Set aside and let the excess water drip off.
Mix all the veggies together so it's easier to top and get a bite of all the different veggies.
Toss cooked noodles in bibim sauce. Place in a bowl and top with the veggies. Enjoy!
