Bibim Guksu (with soy sauce marinade)

Preparation:

prep time: 5 minutes

cook time: 15 minutes

makes 1 serving


Ingredients

-Somyeon noodles (1 bundle)

-1/4 cucumber

-1 poached egg

-1 tbsp soy sauce

-1 tbsp sugar

-1 tsp mirin

-1 tsp sesame oil

-1 tsp vinegar

-sesame seeds


Directions:

  1. Cut cucumber into thin slices. Then julienne them into thin, match-stick pieces.

  2. Make marinade. Take out a bowl and thoroughly mix soy sauce, sugar, mirin, sesame oil, vinegar, and sesame seeds together.

  3. Cook noodles. Put water into a pot. Put on a medium-high heat and bring up to a boil. Check to see if the noodle has been fully cooked through. Drain the water and rinse noodles under cold water. Set aside and let the excess water drip off.

  4. Poach egg.

  5. Toss cooked noodles in marinade. Place poached egg and cucumber strips on top. Enjoy!
