Tomatillo Red Chili Salsa

Ingredients:

  • 16 medium tomatillo husks, removed and rinsed

  • 6 cloves garlic, unpeeled and lightly crushed

  • 3 tbsp ground chiles

  • 2 tsp ground cumin

  • 2 tsp lime zest

  • 2 tbsp lime juice

  • salt and ground pepper, to taste

*Note: you can add Tabasco sauce or any hot sauce of your choice for added flavor


Directions:

  1. Preheat oven to broil and set oven rack 6 inches from broiler. Line a baking sheet with aluminum foil.

  2. Place the tomatillos and crushed garlic on the baking sheet and place in oven. Broil until charred, about 12 minutes, flipping halfway through. Peel garlic.

  3. In a food processor, combine tomatillos, garlic, ground red chiles, cumin, lime zest and juice, 1 tsp salt and 1/4 tsp pepper. Process until the mixture is smooth.

  4. Add 1-2 tsp extra ground chiles if you want more heat. Adjust the seasoning to taste. Enjoy!
