Red Rice

  • 5 cups short-grain rice

  • 5 cups water

  • 3 tablespoons vegetable oil

  • 2 bacon slices & dripping (optional)

  • 1 package achiote powder

  • 1/2 a medium onion, chopped

  • 1 1/2 teaspoons garlic powder

  • 1 tsp salt, to taste

  • 1/2 tsp black pepper


  1. Dice the bacon and add it to the pot cooking it until it's crispy and you get all the dripping. Put rice, onion, achiote powder, salt, pepper, and garlic powder.

  2. Bring the rice to a boil and then allow it to boil down until the liquid is almost completely gone; about 15 to 20 minutes. Cover and reduce heat to low, and simmer for 15 minutes. Stir and serve.

  3. Put the rice, chopped bacon, onions, achiote powder, salt, pepper, and garlic powder into the rice cooker and stir to mix well, making sure the achiote powder gets into all the rice. Cook according to your rice cooker's instructions. Once done, serve and enjoy!
