Hobi Toast

1 servings


  • 2 slices of bread (white, whole grain, or gluten free)

  • strawberry jam (or your flavor of choice)

  • 2 tbsp butter, plus more for the toast

  • 2 eggs

  • salt and pepper

  • 2 slices of bacon (type of meat or substitute of choice)


  1. To a pan, add your bacon and cook until crispy. Then set them aside on a paper towel to absorb excess oil.

  2. In a bowl, lightly beat your eggs with 3/4 tsp salt and a few grinds of black pepper.

  3. Melt 1 tbsp of the butter in a medium nonstick skillet over low heat. Swirl to coat the bottom and sides. Add the eggs, and cook slowly, scraping them with a rubber spatula occasionally so they do not burn and cook evenly, until they have thickened and are soft, about 10 minutes. If you like your eggs a little firmer, cook them for an additional 2-3 minutes.

  4. Remove them from the heat and gently fold in the remaining 1 tbsp of butter.

  5. Toast your bread to desired doneness.

To serve

  1. Assemble your Hobi toast by coating one of the slices of toast with butter then jam. Add about 2 tbsp of scrambled eggs and then top with bacon and enjoy!

Vegan option

Vegan egg scramble

  • 8oz firm tofu

  • 1/4 tsp salt

  • 1/4 tsp turmeric powder

  • 1/8 tsp ground black pepper


  1. Chop the tofu and use a form to crumble it into bite-sized pieces.

  2. Add some oil to a frying pan when its hot, and add the tofu and all seasonings. Stir until well combined and cook over medium-high heat for 5-10 minutes, stirring occasionally.

  3. You can also use JustEggs or any egg substitute.
